Pulled BBQ Chicken with 1234 Food Plan
Serves – 4 4 skinless chicken breasts 45g of bbq seasoning Low calorie cooking spray 1 onion 1 red pepper 2 garlic cloves 1 tbsp of tomato purée 1 x 400g chopped tin tomatoes 2tbsp of white wine vinegar 1tbsp of paprika 1 tbsp of dried thyme 3 tbsp of BBQ sauce / marinade ( can add more depends on taste) 400ml + 1 chicken stock Pepper and salt to season 1. Coat the chicken in BBQ seasoning in a bowl Spray frying pan with low calorie spray. 2. Cook on a medium heat chicken breasts for 5 minutes on both sides until golden brown (don’t worry if not thoroughly cooked as will be cooked again) 3. Put chicken to one side. Can add more oil to pan if needed, add the onion, pepper and garlic and fry for 10 minutes until soft. 4. Then add the tomato purée, tinned tomatoes, vinegar, BBQ sauce and stir. 5. Then add the paprika, thyme, salt and pepper and chicken stock. Cook for 5 minutes. 6. Place the chicken back in the pan and cook uncovered on medium heat for 45/50 minutes. 7. Once cooked remove chicken into a dish and use 2 forks to shred the chicken. 8. Reduce the sauce by half and then pour over the shredded chicken and gently mix together! 9. Can add additional salt and pepper if needed.
